There are many regional variants with different fillings and shape. The name derives from their shape and color, arancini in italian language means “small orange”). Il pizzolo is a typical product of Sicilian cuisine, especially in the Province of Syracuse. It consists of two pizzas one above the other, superficially seasoned with oil, oregano, pepper, parmesan cheese and salt and stuffed with various ingredients, salted (with meat, vegetables, cheese or salami) or sweet (with pistachio cream, chocolate cream, )

Panino con la milza is a popular street food in Palermo, it is a sandwich made with pieces of milt and veal lung. In the sandwich there is also grated cheese or cottage cheese. To be honest i never tried this, but I suggest you to try it because they told me that is very tasty.

Le genovesi are made of 2 disks of soft cookie-like dough with a crispy exterior, which are filled with custard that should be creamy and scented with lemon zest. These custard-filled pastries sport a dusting of powdered sugar, and are best eaten warm from the oven. The best place to eat genovesi is the pastry shop of Maria Grammatico in the hilltop town of Erice, in Trapani.
